Menu Plan Monday


Good morning! I do my dinner meal plans by the month, so that I can limit my trips to the grocery store. Most of my recipes don't call for milk or eggs, so I don't have to make the weekly run to stock up.
This weeks menu consists of the following:
Monday - Salsa Chicken:
4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese2 tablespoons sour cream (optional)
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.
Tuesday - Fettichini Alfredo. Our veggisaurus meal for the week. We do this to save money, but hopefully it will help us stay more health as well *snickers at the thought of alfredo being healthy*
Wednesday - Tex-Mex Minestrone. We're trying this one out for the first time - I'll post about how it goes. http://www.kraftfoods.com/kf/recipes/tex-mex-minestrone-107322.aspx
Thursday - Fish sticks and fries. Not Mr. Right's favorite, but I have a big bag of them and we don't want to just throw them out (when I purchased them I didn't realize that he wasn't a fan).
Friday - Baked Pizza Mac. I'm gonna have to go to the grocery store if we do this one this week to get some eggs. http://www.kraftfoods.com/kf/recipes/super-baked-pizza-mac-89844.aspx its a new recipe as well.
I usually don't plan for Saturday, since its hard to tell what we'll be into. This week I'll probably bump one of my week day meals to Saturday since his parents are in town today. Usually when they are in for a visit we go out for pizza and wings, and I doubt tonight will be much different.

  6. Welcome to the blogosphere! Good luck with your wedding. I look forward to reading the details. I'm a huge fan of weddings on a budget. I think too many people get caught up in going crazy, and forget that what really matters is the marriage.

    Your meal plan sounds good. I can't imagine shopping by the month! I feel like I'm doing well if I can limit it to once a week/10 days.

  7. Mmmmm.... fettucine alfredo.... YUM! I love it, but hubby doesn't, so it's one of those meals I save for when he's away at dinnertime. ;)

    Your menu looks great - and thanks for inviting us to look in as you plan your wedding! It's an exciting time. Being a bride really is a time to let people shower you.... being a wife is great, but a bride-to-be is like a princess. :)

  8. Congratulations on your wedding, and thanks for your comment! Your week looks great--especially the fettichini alfredo, one of my favorites!

    We got our photographer at a great price, and while some of his pictures were a bit staged for my taste, I loved the candid ones that were more photojournalistic, the header on mine being one of my favorites.

    I'll check back to read more about your wedding planning--it's one of my favorite subjects! :)
